Quick & Easy Shrimp Tacos

This delicious shrimp and tacos recipe is quick and easy to prepare and another good one to whip up on a weeknight. It’s made with sweet chili-lime coleslaw, zesty shrimp, and a spicy garlic-mayo sauce all loaded on tortillas.

What to do:

  1. Prepare the slaw. I use a pre-packaged coleslaw cabbage blend. Toss in with cilantro, red onion, avocado, lime juice, cumin powder, extra-virgin olive oil, and sweet chili sauce.
  2. Prepare the garlic-lime mayo. Mix mayonnaise, hot sauce such as TABASCO®, garlic powder, lime juice, and salt together.
  3. Cook the shrimp. Peel and devein the shrimp and toss them in a bowl containing a mix of cilantro, lime juice, garlic, taco seasoning, olive oil, and salt.
  4. Assemble the tacos. Load the tacos with a big scoop of the slaw, a few shrimp, and a drizzle of the garlic-lime mayo. You can sprinkle on any additional toppings of your choice such as jalapeño or cheese. Enjoy!

Ingredients:

For the slaw:

  • 2 cups shredded coleslaw mix
  • 1/4 cup freshly chopped cilantro
  • 1/2 red onion, thinly sliced
  • 1 avocado, thinly sliced
  • Juice of 2 limes
  • 2 tbsp extra-virgin olive oil
  • 3 tbsp sweet chili sauce
  • 1/2 tsp cumin powder

For the tacos and shrimp:

  • Juice of 3 limes
  • 2 tbsp freshly chopped cilantro
  • 2 crushed garlic cloves
  • 3 tbsp taco seasoning
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 lb large shrimp, peeled and deveined
  • 8-10 small flour or corn tortillas

For the garlic-lime mayo:

  • 1/4 cup mayonnaise
  • 3 tbsp TABASCO® (or your choice of hot sauce)
  • 1 tbsp lime juice
  • 1 tsp garlic powder
  • 1/4 tsp salt

Instructions:

  1. Prepare the slaw by mixing together the ingredients mentioned above in a large bowl. Place in the refrigerator until ready to use.
  2. Peel and devein the shrimp.
  3. In a large bowl, whisk together lime juice, cilantro, crushed garlic, taco seasoning, olive oil, and salt. Toss in the shrimp into the bowl and coat well. Place in the refrigerator for about 10 minutes.
  4. Make the garlic-lime mayo by whisking all the ingredients together in a bowl until well combined.
  5. Heat some oil in a grill or pan to medium-high heat. Cook the shrimp about 2 minutes per side, until they are opaque and cooked through.
  6. Assemble the tacos by adding a generous amount of the slaw, a few shrimp, and a drizzle of the garlic-lime mayo. Top with any additional ingredients of your choice and serve.
